jenova is the say2 server (used to be "sephiroth"). mud-server is a gateway server for tf (or other mud-client) users. mochi is the java gui client by greg "e" brown. meko is the gtk+ gui client by scott james remnant. both jenova and mud-server REQUIRE libsay2 to build. you don't have to install libsay2 if you don't want to -- if you build libsay2 from the same folder level as you build jenova and/or mud-server, they'll find it. say2pl-*.tgz is a snapshot of the say2 perl client, which looks somewhat like ircII and uses curses. to use it, you need the perl curses module, conveniently mirrored here.
